Spicy Lentil and Tomato Soup

I haven't posted a recipe on my blog in a few weeks and I felt like something warm and cosy. I've also been overindulging as of late and am looking to trim up a little before Christmas. This recipe is courtesy of my best friend Rachel who has always been 'that one friend' that is into lentils and beans and adventurous vegetables. Anyway I decided to take a leaf out of her book and put together a lentil soup. Lentils and beans are amazing in soups as they are packed full of protein and fibre, they are so filling and when you blitz them up they make it really nice and creamy. Without further ado, here's the recipe...

1 Onion
1 Glove of Garlic
Spices and Herbs (I added cumin, ginger and mixed dried herbs)
2 Handfuls of Green/Red Lentils
1/2 Tin of Tomatoes
1 Organic Stock Cube
Sweet Chilli Sauce (optional)

  • Chop the onions and garlic, add the onions and spices to a hot pan with a little oil. Keep on a medium heat and soften. Add the garlic and keep stirring for about 30 seconds.
  • Add the lentils, about a cup of hot water, tinned tomatoes and crumble in the stock cube. 
  • Simmer for 15-20 minutes until the lentils are cooked.
  • Blend the soup and add sweet chilli, salt and pepper to taste.

It really is that simple! This soup is balanced and nutritious and will keep you full and warm... serve alone if you want to be super healthy or with a homemade wholemeal bread roll or some rye bead. Let me know if you try this, I would love to see some snaps of your attempts.

My London Adventures...

So if you follow any of my social media you will probably know I took a little trip last week to London and Norwich to see one of my best friends Carly. While I was there I met some amazing people, did a little sightseeing and ate some amazing food. 

I do love blogging but it can be a little competitive and the events have a lot of focus on publicity and networking so I decided to organise a little blogging event of my own. No brands, no sponsors, no goodie bags. Just bloggers meeting, eating and having a good time. I decided to have it at B-Soho which is a cocktail bar and pizzeria near Oxford Circus. You can't beat the location and the place has a really good vibe with lots of live music. The cocktails were also delicious; me and Jen had the porn star - can you guess why we picked that one? ;) It was tasty, fruity and very girlie. As for the pizzas they were simple but good and pretty cheap for that part of London. I think mine cost about a tenner. They did have a little bit of a mix up with our reservation, but I worked in the restaurant industry for years and I know how easy it is for mistakes to be made. In the end they looked after us so well and it seemed like everyone had a really good time. You can find their website here, I'd definitely recommend it for a girls night or a birthday but maybe not a romantic meal for two as it was pretty loud in there. 

I also went to Borough Market earlier that day with Shu, Carly and Rhiannon. Another place I would recommend to go if you are in the neighbourhood. All the food was amazing and it's such a fun, casual place to shop or grab lunch with friends. Me and Shu shared chilli fried squid and it was BLOODY GOOD! They also had so many sweet treats, perhaps not the place to go if you are on a diet but definitely foodie heaven. 

Last but certainly not least Carly and I went to Harrods on the Friday before we hopped on the train to Norwich. If you have never been, now is the time. It's beautiful on the outside and inside with all its christmassy decorations and made me feel so festive. As beautiful as it was the real reason I went to Harrods was to go to LadurĂ©e to buy some macaroons. Can you tell this trip revolved around food? They are my favourite place to eat them and every time I do it brings me right back to Paris. Go for the pistachio or salted caramel ones... they are my favourite! 

Now I've well and truly made you all hungry I just wanted to say thanks for Carly and Leon for having me at there house, and thanks Milly, Liz, Brooke, Jen, Rhiannon and Shu coming along to the meal and for letting me nab your pictures. Make sure you follow all these lovely people as they genuinely are so much fun and I love them all to pieces.

Bring on the Cake!

My little brother Oliver turned 17 last friday, I honestly cannot believe it. Makes me feel so old! Anyway here is the cake my mother and I baked him. She did most of the work. It was a white, milk and dark chocolate masterpiece, although I didn't get to fully enjoy it until the next day as it was so full from the chicken pie we has just eaten. Very healthy :P.

Orange Mocha Smoothie Recipes - Cook Off with Shannon

Orange Mocha Smoothie Recipe:

1-2 tsp of Instant Coffee
1 Sachet of Stevia
1 Banana
Handful of Frozen Spinach
200 ml Almond Milk
1 drop of Vanilla Extract (Not essence) 
1/2 Scoop of Hemp Protein
1 tbsp Ground Flaxseed
1 tbsp of Cocoa Powder
Zest of half an Orange

Since you have all been asking for more recipes and cooking videos this week on my Youtube channel I did a cook off with Shannon from Glamour Wonderland. She is a gorgeous Youtuber from the States who just so happens to be very into healthy eating so it worked out perfectly. Healthy Gingerbread Latte

Since my healthy version of the Chai Tea Latte went down so well I thought I'd concoct another Starbucks special. Given that its red cup season, what better than one of their christmas drinks - the gingerbread latte. This is simple, quick and can be dairy and soya free. 

What you will need:
Gingerbread spice mix or 
1/2 tsp of Cinnamon
1/4 tsp of Ground Gloves
1/4 tsp of ground ginger
1 Shot of coffee (Either 1 tbsp of instant with a little water or if you 
are lucky enough to have an espresso machine use a shot of that)
1/2 tsp Vanilla Extract
1 tsp of honey or unrefined sugar
3/4 Mug of Almond Milk (or whichever milk you prefer)

1) Heat the milk in a jug in the microwave then whisk vicariously with a fork or a mini whisk. (To get it very frothy use a blender)
2) Put the spices, vanilla and stevia into your mug. 
3) Pour the coffee over the spices and mix everything up. 
4) Add your hot frothy milk on top and voila! I like to finish with a dusting of cinnamon. 

Let me know if you try this or my chai tea latte out! It's much healthier and cheaper than Starbucks and you don't have to leave your house to get it :) Perfect if you have a hangover during the holiday season!

Blog Makeover & Life Update!

I feel like I haven't blogged in ages, which is true I guess it's been a few weeks. I've been trying to get the layout of my blog sorted before I carried on blogging and I think it's finally starting to look how I want it (Apart from the fronts - don't get me started on the fonts!) 

Also big news I FINALLY have a proper URL. This blog will now be - it makes me feel so grown up and excited. I'm umming and arring over whether the design is too cute and if I should make the background plain. I'd love to know what you think of it? I've also tried to make it as user friendly as possible so hopefully everyone can find what they are looking for. I'm also going to try and do more lifestyle posts on my blog as well as lots more recipes and maybe some outfit and fashion related posts. 

Anyway enough of my blog, thought I'd give you a little update on me, since a few of you have been asking after my video on depression. As I've said I am taking medication. At first the side effects were awful and I was so sick I could barely move or do anything. A couple of months down the line and they have eased off a treat and I'm feeling a lot better. The only problem is the weight gain that always happens with anti-depressants. It's a BITCH! It is also preventing me from losing weight which is so frustrating. I am currently switching over to a different kind of medication in the hopes it will not affect my weight (metabolism and appetite) as much. I'm also trying to do lots of weight training to build up muscle, in the hopes this will raise my metabolism. I will be sure to keep you updated on that front and possibly do some vlogs about it over on my new vlog channel. So apart from struggling a bit with my weight and the usually work stress I'm doing pretty good. I hope any of you out there going through the same thing are seeing some improvements. 

I'm going to see Carly in just over a week, which I'm so looking forward to it. Man do I need a week off and some fun! I can't wait to tourist it up in London. I'd imagine I will also be vlogging while there and I'll post some pictures of our adventures on the blog. Hope you are all well and this little catch up has brought you all back into the loop.
