Healthy Blueberry Muffins




These muffins are amazing! Just the right balance between healthy and delicious, and a perfect way to ease yourself off the christmas chocolate. I've been back on the diet bandwagon after piling on a couple of pounds over christmas and these are a great weekend treat that won't throw you off track. I like to put them in tupperware once cooled and freeze for a later date, that way you don't eat them all at once. I made these 'fairy cake' size to keep the portion's down so they only needed ten minutes to cook, but they need longer if you do them in muffin cases. Let me know if you give these a try. 

Recipe
125g Self-Raising Flour
75g Wholemeal flour
200g Oats
80g Brown Sugar
2 tsp Baking Powder
2 tsp Cinnamon
1 pinch of Salt
2 Mashed Bananas
2 Eggs
2 tbsp Sunflower Oil
250ml Almond Milk
125g Blueberries 
Handful of Dried fruit (optional)

Directions 
  1. Mix the flour, oats, brown sugar, cinnamon, baking powder and salt.
  2. Add the mashed bananas, egg yolks, almond milk and oil and mix.
  3. Whisk the eggs whites to in a separate bowl. 
  4. Fold in the egg whites into the batter and then add the blueberries.
  5. Spoon out the batter into muffin cases and cook for 10-20minutes at 180C.

These look delicious! Freezing them is a great idea, I'd never thought of doing that with muffins but as much as I love baking, I hate feeling that I need to eat everything before it goes stale!
