Healthy Blueberry Muffins
Recipe
125g Self-Raising Flour
75g Wholemeal flour
200g Oats
80g Brown Sugar
2 tsp Baking Powder
2 tsp Cinnamon
1 pinch of Salt
2 Mashed Bananas
2 Eggs
2 tbsp Sunflower Oil
250ml Almond Milk
125g Blueberries
Handful of Dried fruit (optional)
Handful of Dried fruit (optional)
Directions
- Mix the flour, oats, brown sugar, cinnamon, baking powder and salt.
- Add the mashed bananas, egg yolks, almond milk and oil and mix.
- Whisk the eggs whites to in a separate bowl.
- Fold in the egg whites into the batter and then add the blueberries.
- Spoon out the batter into muffin cases and cook for 10-20minutes at 180C.
